Ilya Zakharov’s signature cuisine skilfully combines sophisticated elements from local dishes, pan-Asian highlights and European classics. The core menu consists of innovative fish, seafood and meat dishes. In full accord with the strict rules of haute cuisine, everything served at Brunello, from meat hors d’oeuvres and pastries to sauces and ice cream, is cooked from scratch. In creating his dishes, the chef uses local foods, including mountain herbs, while live marine delicacies are shipped to the restaurant aquarium from Japan and the Far East.Corporate chef
Corporate chef Ilya Zakharov designed the gastronomic concepts of the restaurants in the Krasnaya Polyana Gaming Zone: Brunello and Buffet in Sochi and the restaurant at the Château de Talu winery in Gelendzhik. He has won prestigious awards and hosted popular TV shows “Hell’s Kitchen”, “White Jacket” and “Call the Chef”.

We don't blindly follow trends; we create them, reimagining familiar combinations through the lens of seasonality and local produce. Here you'll find duck breast simmered in smoky lapchinka tea, served with delicate Jerusalem artichoke puree and crispy apple crisps, or homemade pasta with truffle cream and sun-dried tomato confit, where every note resonates distinctly and harmoniously. Our philosophy is complex simplicity, where the apparent lightness of a dish conceals a profound exploration of texture, temperature, and the balance of acidity, sweetness, and umami.
Each dish is a story told through the language of gastronomy, where local farmhouse cheeses, wild vegetables, and fish from nearby lakes become the protagonists. We respect seasonality, so the menu is vibrant and changing, inviting guests to constantly discover new facets of our signature style. This is a cuisine without boundaries, inspired by travel but rooted in our native landscape, where experimentation is only justified by impeccable taste, and guests become participants in this ongoing creative exploration.
