- Persimmon with goat and sheep's milk cheese, flavored with smoked Circassian pear
- Sea scallop with porcini mushrooms and Siberian walnut praline
- Duck pâté with beetroot marmalade, northern cloudberry cream, and champagne jelly

- Quail stuffed with foie gras, with amaranth and wild mushroom porridge in a red wine sauce
